Convenient to prepare in advance to have it handy when needed, since it tastes better every minute it has more time to marinate.
Of course you can substitute the cannellini beans with any beans you like - or chickpeas, green peas etc. Be creative. The roasted artichokes are quite patient with companions and go well with almost anything Mediterranean.
