Lovely combination of green asparagus and red onions. With a filling which is so much like a dairy quiche – even the egg taste comes through thanks to Kala Namak (black salt).
A great spring or early summer dish for either lunch or dinner.
Kala Namak, also called black salt, adds a very eggy flavour to dishes, especially combined with tofu.
Tofu and kala namak salt can make a perfect alternative of scrambled eggs for example.
In this case it gives the quiche the real quiche taste.
Try to use silk tofu instead of the normal tofu, combined with kala namak, white miso paste, and nutritional yeast, you'll come as close as it gets to an egg and dairy filling.
The tapioca starch and chickpea flour will help keep everything together, the same effect like the egg white would do.
The combination of green asparagus and red onion is not only very pretty. It is also flavour wise a great complement.
You can either prepare your own short crust (see recipe) or buy a ready made in the supermarket, most options are vegan.
