As a vegan it is sometimes hard to make an easy and fast sandwich, so much easier to put a slice of salami or a piece of cheese on bread.
This deli filler with chickpeas and artichokes however is done within minutes and it keeps fresh in the fridge for at least 3 days. It is full of proteins and will keep you going for hours after your sandwich lunch break.
Make sure to take a good quality bread (sourdough best).
The amount of ingredients mentioned above will feed you at least with 4-5 sandwiches.
