Vegan Kasspätzle

A traditional dish found in Southern Germany, Austria and Switzerland. Usually with a lot of cheese. Here in a vegan version.

And to make it a bit healthier and a wholesome meal – pimped with fresh broccoli.

 

You can prepare this with or without veggies. Without veggies it is the original, classical dish and a perfect side dish. With veggies it becomes a wholesome dinner or lunch.
If you don't like broccoli - this will go well also with mushrooms, cauliflower, zucchini, and many more veggies.

 

You could prepare this in advance, keep it in a fridge for 1 day and bake it (approx 20 min) just when you need it.

 

The recipe refers to the vegan parmesan we explained in our vegan basics section. We have always a plastic box of it in the fridge, handy to use any time.

 

The recipe serves 3 – 4 people.
