If you are looking for a soy free Bolognese alternative – lentils and mushrooms work very well.
It is not like the authentic “al ragu” (a more traditional recipe, but made with soy and/or tofu you can find here => SPAGHETTI AL RAGU), but it tastes very delicious and is healthy at the same time.
You can prepare the sauce in advance, freeze it for several weeks or store it in the fridge for a couple of days. it tastes very well also with rice, or as a stuffing in vegetables.
