The vegan custard is made with silken tofu. Please don't use the firm tofu, it has a complete different taste and will never get this real custard feeling. Usually you find silken tofu in the Asian department of your supermarket (not in the fridge with the other tofu). Otherwise try to get it online.
If you don't like peaches - feel free to be creative and substitute them with any other fruit you like. Apricots, berries, oranges, mandarines - they all will fit perfectly to this vegan custard.
If you feel lazy or are too busy - there is no shame to buy a premade short crust, most options in the supermarkets are vegan.
