Stuffed Potato Cakes

 

 

A great alternative for sandwiches as a packed lunch. Call it the portable Shepherd's pie…!

 

Baked cakes from mashed potatoes with a spicy filling of mushrooms, onions and tofu.

Filling, full of protein, easy to store, to freeze and to prepare in advance. Great to take away for a picnic or for office and school.

 

Very easy to prepare in advance and to freeze it in freezer bags. Simply reheat in the oven until warm. When you intend to store them, make sure to freeze or chill them immediately after baking (and letting them cool down for a bit), because there are mushrooms in the filling. Mushrooms are fine to reheat as long as they don't stay too long non chilled. 
In the fridge they'll stay up to 3 days, in the freezer max 2 months.

 

They taste both cold or hot.
