Vegan Spinach-Artichoke-Pasta

Both young spinach and artichokes are very versatile and can be used in many ways. The combination of both however is absolutely delicious.

 

A nice spring recipe, quickly cooked, filling and healthy. The creamy sauce of the pasta is made with cashew and white beans. Although it looks and tastes rich, it is rather low in fat but full of proteins. A healthy way to enjoy pasta.

 

Tip: prepare a bit more of the sauce and use it as a filling in wraps or pita pockets. Absolutely amazing, a nice packed lunch!

 

For many vegan recipes, a good quality blender is essential. So in this recipe for the white sauce. If you cook regularly vegan, it is worth to consider to invest in one.

 

 

The recipe serves 3-4 portions.
